Baby Food Making
I have been so excited about making Jackson's baby food. (Yeah, I know...I guess I'm easily excited.) I had planned to wait until he was six months old but with only one week to go I couldn't stand it anymore. He has been doing so good with his rice cereal, I thought he was ready for some "real food".
I decided that his first food would be carrots. I wanted to start with a vegetable and thought that Jackson would enjoy their naturally sweet taste.
Not only is it exciting to know what ingredients are in his food, but homemade baby food is also a huge money saver! For 79 cents I made him about ten servings of carrot baby food!

Jackson, who is teething, enjoyed chewing on a cold carrot. This was his way of participating.After peeling, chopping and steaming the carrots it was time to puree!
(I LOVE my new Kitchen Aid hand blender...it's perfect!)Here's the finished product.
After pureeing the carrots I poured them into an ice tray and froze them.
(For the record, I realize that the picture of the carrot isn't necessary...
give me a break, I taught first grade.)Now for the test.

"What do you mean I'm eating this again tomorrow!?"
Oh, well. Maybe carrots will grow on him. Let's hope so! We are going to do carrots for a few more days and then we're on to apples. I think he'll like them better. I felt so domesticated today. Not only did I make baby food, but I also made laundry detergent! That's about as Martha Stewart as it gets for me.

Sweet Giggles
Jackson loves his Aunt Leah and Aunt Sarah (my sweet sisters) and when they come to visit he is covered in kisses. Daniel's 28th birthday! Thirty is just around the corner...for both of us...wow! Jackson was memorized by the smoke from the candles.
Jackson had his first rice cereal this month. He is doing great and would prefer to feed himself.
This was his very first bite of rice cereal.
I saved the best for last. Jackson is such a ball of sunshine! He brings us such joy and I am so grateful (and completely smitten). There is nothing I love more than to hear his sweet laughter. Lately he is amused by the silliest things but as soon as I grab the video camera, he stops. Luckily, I captured some of his giggles to share with you.
